Summer Seminar Series: Sake

You wouldn’t think Santa Fe would be a hub of artisanal sake, but thanks to Floating World, a small importer/distributor responsible for the formidable sake program at Ten Thousand Wave’s restaurant Izanami, there’s plenty of gorgeous, hand-crafted rice wine available right in our home town.
Whereas beer and wine are well-trod paths, sake remains relatable but mysterious. Yet good sake boils down to very basic ingredients—specially cultivated rice, water, yeast, and koji, the special kind of mold that breaks down the complex starches in rice into simple sugars for the purpose of fermentation. The flavors of sake are vastly different than those of wine, which tend to be parsed in terms of an amalgamation of textures and flavors. Sake emphasizes elegance, purity and the transition of textures from sip to swallow. It can be daunting, yet immeasurably rewarding to develop a palate for sake while maintaining an appreciation for wine and beer.
